作者(2019)在《Effects of the Compound Beverage Prepared from Dates Vinegar and Garlic Juice and the Dates Vinegar on Several Diseases and Its in Vivo Mechanism Assessments》一文中研究指出:早在希波克拉底时期,醋就被用来抵抗感染和治疗其他重要疾病,在近期的研究中发现,食用醋还对糖尿病、癌症和心脏病的生物指标具有积极作用。枣引起富含活性物质,早已被民间用于对抗不同的终身疾病和癌症。通过对枣进行发酵可以制备出一种有利于消费者健康的枣醋,枣醋是一种传统的健康食品。另外,现代科学证明,大蒜具有强力杀菌、防治肿瘤、排毒清肠、降低血糖、防治心脑血病、预防感冒、抗疲劳、护肝、抗过敏等多种功能。为了克服一部分人在日常饮食中不愿意直接食用醋和大蒜的问题,本课题组研发出一种由枣醋和大蒜汁制成的复合饮料,以便于消费者方便地摄取到枣醋和大蒜中的活性组分,促进其身体健康。本文的目的就是研究枣醋/大蒜汁复合饮料和枣醋对健康的促进效果,并探索其作用机理。主要研究内容和结果如下:(1)枣醋/大蒜汁复合饮料对改善轻度高胆固醇血症成人的脂质轮廓参数和炎性标记物的影响。50名高胆固醇血症成年受试者在7周内每天饮用500 m L复合饮料或安慰剂。推荐剂量为500毫升的复合饮料可降低总胆固醇(从260.10±17.9至198.90±17.31 mg/d L)和C-反应蛋白(从8.04±1.34至4.45±1.42 mg/L),还降低了心率和平均血压,对测得的心电图参数没有显著影响。这些结果表明,该复合饮料改善了脂质和炎症生物标志物的浓度,并且有益于担心高血压的人。(2)枣醋/大蒜汁复合饮料对肥胖受试者体重、体脂肪量和血清瘦素水平的影响。85名肥胖成年在为期10周的时间里,每天在正常饮食中摄入500毫升复合饮料或安慰剂。结果表明,该复合饮料降低了体重(从73.9±6.7至69.6±5.8 kg,p=0.002)、体脂比(从29.8±5.4至28.1±4.2%,p=0.004)和血清瘦素(从36.25±3.2至31.12±3.7ng/m L,p=0.002),因此可以在代谢综合症的预防中发挥关键作用。(3)枣醋对2型糖尿病患者血液生化和血液学参数的影响。55名血糖超过126mg/d L的受试者,每天在正常饮食中摄入20 m L枣醋或安慰剂,持续10周。结果表明,枣醋改善了血液中糖化血红蛋白(从6.80±2.34至6.17±2.14(%))、空腹血糖(从171.43±36.74至147.56±38.86mg/d L,p=0.001)、总胆固醇(从218.10±16.9至191.14±14.23 mg/d L,p<0.001)、丙氨酸转氨酶(从24.94±5.03至21.88±5.85 IU/L,p=0.002)、碱性磷酸酶(从264.32±45.26至257.30±44.21 IU/L)、叶酸(从34.6±6.6至41.7±6.5 nmol/L,p<0.001)。其他血液生化和血液学因素也有所改善,但改善不显著。因此红枣醋有益于2型糖尿病患者的身体健康。(4)枣浆和枣核制成的枣醋对轻度高胆固醇血症成人血脂谱和炎症生物标志物的影响。76名总胆固醇和低密度脂蛋白胆固醇轻度升高的受试者每天在正常饮食中摄入30m L枣醋或安慰剂,持续4周。结果表明,这种枣醋显著改善了主要的血脂谱参数,总胆固醇从246.40±14.7降至197.60±14.7 mg/d L(p=0.001)、低密度脂蛋白从166.6±11.8降至109.8±11.8(p=0.001)、甘油三酯从170.30±16.54降至161.20±17.8(p=0.002)、高密度脂蛋白从41.7±8.08升至44.1±8.05(p=0.003),也显著的改善了炎症生物标志物,C-反应蛋白从7.05±1.23降至4.12±0.04 mg/L(p=0.001)、一氧化氮从31.06±0.47降至27.01±0.14μmol/L(p=0.002)、肿瘤坏死因子α从17.2±2.8降至13.6±2.4 pg/m L(p=0.001)、纤维蛋白原从272.54±22.6至238.31±11.7 mg/d L(p=0.014),表明枣醋对高血压和心悸患者有益。(5)枣醋的植物化学和理化性质初步评价研究。这部分研究的目的在于比较红枣醋、黑枣醋、市售食醋(镇江香醋(米醋)和柿子醋)之间活性的差异。为了便于分析检测,首先优化了活性物质的超声波辅助甲醇提取的条件。试验确定,利用80%和50%的甲醇超声波提取25min,可分别获得最高的酚类化合物提取率和最高的抗氧化活性。检测发现,红枣醋具有较高的总酚含量(2.57±0.16 mg GAE.m L-1),黑枣醋具有更高的总类胡萝卜素含量(3.43±0.15 mg.100 m L-1)。红枣醋和黑枣醋在理化性质上没有显著差异。红枣醋的总多酚含量远远高于市售食醋,黑枣醋的总类胡萝卜素值远远高于市售食醋,红枣醋和黑枣醋的铁还原抗氧化能力均显著高于市售食醋。这些结果表明,红枣醋无论是红色还是黑色,都有益于消费者的健康,会成为市场上具有竞争力的产品。
