论文摘要: 蔬菜是人们日常饮食中不可缺少的基础性和功能性食品。它富含多种人体必需的维生素、矿物质和纤维素，具有强健体魄，平衡饮食、养生美容、促进血液循环以及抗癌防癌等多种功效。在我国，蔬菜自古以来就受到人们的高度重视。早在2000多年前，中国古代最早的医书之一，《黄帝内经》就提出“五谷为粮、五果为助、五畜为益、五菜为充”的营养学概念。蔬菜在其他国家也受到了高度重视。在上个世纪九十年代初，美国农业部就制定了指导人们日常饮食的“食物金字塔”。该金字塔把食物分成六类：谷物类，蔬菜类、水果类、奶类、肉类和其他类(如脂肪、糖和油料等)。其中谷物类所占份额最大，为每日6～11份。蔬菜类紧跟其后，为每日3-5份。然而，人们已经不仅仅关注蔬菜数量和品种的丰富，而是越来越关注食用蔬菜的安全问题。各国都在密切关注威胁人体安全的农药残留问题并且都已立法严格限制蔬菜的进口。中国的蔬菜由于农药残留问题而被日本和韩国拒之门外就是其中的一例。现在，世界各国，尤其是发达国家，都在大力倡导有机农业的发展。有机蔬菜也得到人们的认可和喜爱。各国都制定了相应的标准来规范有机蔬菜的生产和加工。近几年来，我国的有机蔬菜生产也渐渐与世界接轨，政府部门在参照别国标准的基础上确立了我国自己的有机蔬菜标准。但有机蔬菜的发展在我国才刚刚起步，还需要不断的引导、指导和完善。蔬菜业是我国农业的一个重要组成部分，也是众多盈利产业之一。蔬菜出口在农产品出口中占有重要的地位，蔬菜出口量逐年持续增加。2003年，蔬菜出口顺差达到了29.96亿美元，大约是该年所有农产品顺差的1.2倍。作为劳动密集型产业，蔬菜业具有生产成本低、吸纳劳动力多和在国际市场上具有明显竞争优势等诸多优点，也是解决我国农村人口就业、增加农民收入的重要渠道。它有助于农村的稳定发展，对振兴东北老工业基地和加速西部大开发也会起到积极的作用。可以说，蔬菜业是推进建设小康社会和和谐社会的重要产业。因此，探索蔬菜产业在国际市场上的竞争力具有重要的现实意义。
